Thankyou so much chef @sherlyangsani for cooking me this humble yet hearty Misua with Hong Zao Chicken Soup for dinner.This is really delicious.
Misua is perfectly al-dente.
Chicken is so juicy and the meat literally falls off the bone by itself.
And the angcao soup really is a bang !
It's really well seasoned.
It has right balance of saltiness and sweetness, slight alcoholic with hints of ginger.
This taste is truly remarkable.
Basically angcao is combination of red yeast rice (angkak), yeast and sticky rice which are fermented for at least 3 months or more.
After the fermentation, the angcao will be separated in 2 types : angcao paste and angcao wine.
This delicacy famously known as Hong Zao Ji Tang (红槽鸡汤) in the local Chinese foo chow (hock chew / 福州) community and had been passed from generation through generation.
This dish is very nourishing and beneficial especially for ladies.
It is a popular confinement dish.
